I have been bad I haven't wrote in a few days. Also I skipped one of my days for cooking.
On Tuesday I made Chicken fajitas from scratch instead of using a package for once. They turned out just as good or even better than using the el peso seasoning. The main change I made with the recipe is using a zip-lock bag to mix and marinate the chicken.
On Wednesday I was supposed to make meatloaf but I was a little lazy and just eat leftovers.
Thursday is a supper busy day and most of it spent out of the house.
On Friday I finally made the meatloaf. It uses ingredients I do not use regularly. Tip for any one when using chilies do not touch your mouth till wash your hands. Luckily I remember to drink milk.
Today is a salad which will go with my Leftovers...

Lasange
Tonight I made Lasagna, which took a while to make. The sauce took time to make. Normally I would just add to can sauce to use but the recipe does it for scratch. I wish I started earlier but I couldn't because I worked till 5.
Hopefully it will taste good
This is what it looks like

Tomorrow I will make Granola, and eat my leftovers

Saturday
So today was an easy day for the challenge.
Fruit Smoothie which I have made many times before, in fact at one point I had one day for weeks on end.
The main difference the addition of nuts, which is interesting.
Tomorrow the number generator gave me number 169. In the book that is Lasagna.
So out to the store to buy ingredients again.
More veggies...
Also
Bacon
ground pork
Sour cream
Parmesan Cheese
The recipe is different then my usual way that I would make it but that is one of the things is to try to do things a new way.
To prevent myself from getting into a rut.

Baked Apples
Luckily I was to find all the equipment I needed at the store. Save-on-Foods even had the mortar and pestle.

I only did half the recipe, since I am the only who will be eating. Also I did 1 substitution of the ingredients. Instead of mixed spices I used Pumpkin spices. I think that is just a British to Canada difference I hope.
The coring of the apples wasn't easy I went over the core more than once just to make sure I didn't leave any seeds. I did have fun bash the clove and using a zester for the first time. I think a lot of people will have fun doing the mixing of ingredients, which is by hand, just remember to throughly wash hand before.
The toughest part is waiting for the apples to bake. Here is the final result:

It was delicious.
Now for Friday ...
